Recipe: Artichoke and Portabello Bake

1 can (14 oz). Reese Artichoke Hearts, drained
2 Tablespoons Da Vinci Olive Oil
2 teaspoons minced garlic
1/2 cup chopped shallots
8 oz . sliced Portabello mushrooms
1 teaspoon Italian Seasoning
salt and pepper -- to taste
1 tablespoon lemon juice
1/4 cup Da Vinci Italian seasoned bread crumbs

Preheat oven to 350º F. Lightly oil a casserole dish with olive oil. Arrange artichokes in the dish. In a skillet, sauté the garlic and shallots in olive oil for 2 -3 minutes. Add remaining ingredients and sauté 2 - 3 minutes, stirring frequently. Cover the artichokes with the mushroom mixture. Bake uncovered, for 25 - 30 minutes.

Serves 4.
