Linguine and Clam Sauce
1/2 pound Da Vinci Linguine
2 tablespoons Da Vinci Olive Oil
3 cloves garlic, chopped
1 cup Reese Clam Juice, bottled
2 cans (6 1/2 oz.) Reese Minced Clams (drain and save liquid)
1 tablespoon grated lemon rind
1 tablespoon lemon juice
2 tablespoons minced, fresh, flat leaf parsley
salt & pepper to taste
Cook pasta as directed on package. While pasta cooks, sauté olive oil and garlic in a sauce pan until slightly browned. Add the clam juice, the saved liquid from the clams, and lemon rind. Bring to a boil over medium heat then reduce heat and simmer gently for 3-4 minutes. Add the clams, lemon juice and half the parsley. Stir until heated thoroughly. Season to taste with salt and pepper. Serve over drained pasta and garnish with remaining parsley.
