Zesty Italian Bread and Tomato Salad
3 cups hard and crusty bread torn into 1 inch pieces
1/2 cup water (or more depending in dryness of bread)
2 ripe tomatoes, diced
1 tsp. red pepper flakes
1/2 red onion, quartered and finely sliced
2 Tbsp. fresh basil, chopped
2 Tbsp. Italian parsley, chopped
1/2 tsp. dried oregano
5 Tbsp. Da Vinci Extra Virgin Olive Oil
3 Tbsp. Reese Red Wine Vinegar
Salt and Pepper
Put bread in a salad bowl and sprinkle with water to moisten. Add tomatoes, pepper flakes, onion and herbs. In a small bowl, whisk olive oil and vinegar. Pour over salad. Add salt and pepper to taste. Toss to mix well.
